For starters,

Differences in metabolic rates for different species and tissues;
differences in organ and body temperatures,
differences in programmed senesence of cells for different species,
etc.
The above are some but not all of the factors involved.

In dealing with living organisms, one must remember that "always" and "never" 
are descriptives never to be used.
