We use I-125 in small amounts (<.1 uCi per run) for a radioimmunoasssay for
morphine as part of a bioanalytical undergraduate glass.

Are there rigorous and short safety fact sheets for tracers like I-125 that
specifically delineate the hazards of the particular material -- thyroid
accumulation, gamma dose vs. beta, etc etc etc?

If so, where might an enterprising RSO get them?

Try contacting the vendor.  They should be able to fax an MSDS directly to you.  
Whether it addresses the radiation aspect, I'm not sure about that; but I feel certain 
that they could steer you in the right direction.
