Okay, I used the wrong subject line for a comment on detection statistics. Oh well, for this topic, the question was "why not irradiate all hamburger, etc." The answer is simple economics. Too expensive and logistically difficult. Food irradiation is a great technique for some applications and hamburger might be one but until the infrastructure changes such that huge quantities of beef could be irradiated and distributed (not likely), it's far more cost-effective to simply use good cooking and food preparation to avoid the problems. IMHO, based on reading about the topic over the years.
