Joe,
I am always very cautious not to pretend to be an expert in all kind of
matters. I like to eat all kind of game meat. but I could never kill a roe
deer, red deer, wild boar, even a duck or a rabbit..... So I cannot answer
your question definitely: I believe that meat of wild boar is not suitable
for bacon - since they roam in the wild they will not accumulate enough fat
for bacon! So I think you will have to stick to traditional bacon. I wish
good appetite!
Franz
