I am not familiar with the study you
referenced, but I can offer some insight
regarding pigs.  Back in a previous
lifetime I was a forensic scientist with
the State crime laboratory here in Texas.
We occasionally used pig skins for
ballistics work such as determining gun
shot distances, stippling patterns, and so
on. Apparently, pig skin most closely
resembles human skin in terms of texture,
pore size, etc.  One caveat: in order to
get a representative surface area, you must
shave your swine!
