To second the earlier comment: back when I did real work, I
discussed this issue with several biochemists.  They all agreed that
once the label took, it was very stable.  We never noticed any
significant radiation safety problems with the iodinated proteins.
Of course, the activity levels used were also quite a bit
lower than the original NaI.
